For my last food storage experiment from the Essentials of Home Production and Storage booklet I decided to try the egg substitute for baking.
I was pretty skeptical so I decided to try an easy, cheap recipe…that way if it didn’t turn out I wouldn’t be as sad. 🙂
I chose cake mix cookie bars:
1 box of cake mix
2 eggs
1/2 c. oil
{add a couple TBSP of flour if at a high altitude like me}
Mix all together and spoon into cookies on cookie sheet or into an 8×8 greased pan. If baking cookies bake at 350 degrees for 9-10 min. If baking bars bake at 350 degrees for about 20 minutes.
For the egg substitute: combine 1 tsp. of gelatin {about 1/4-1/3 of those small packets of gelatin in those 60 cent boxes at Walmart}, 3 TBSP. cold water and 2 TBSP. plus 1 tsp. boiling water. This will replace one egg in a recipe.
Verdict. Not bad. I could tell a very slight difference but I don’t know if it was because I knew there was one. Nice to know I can use this in a pinch or in an emergency.
Thanks for coming along on the food storage experiment adventure with me!Â
See you next week for some more crafting!

and I've never heard of this gelatin substitute recipe. I'll have to try it out one of these days.
